1.This Month’s Sake 「Single Malt Hakushu」「Shirataki Junmai Ginjo Jyozen Mizuno Gotoshi」
This month, we will introduce two more sake recommended by BAR Shinkai.
The first bottle is “Single Malt Hakushu,” which has become difficult to obtain due to its rapidly growing demand not only in Japan but also overseas.
In 1973, Hakushu Distillery was established at the foot of Kaikomagatake in the Southern Alps, surrounded by rich nature. This whisky is a single malt whisky made from 100% Hakushu malt, carefully selected by blenders from among a wide variety of Hakushu distillery’s original whiskies. It has a fresh aroma and a clean, crisp mouthfeel.
At BAR Shinkai, we have three types of Hakushu NV and three types of Hakushu aged 12 and 18 years. Please come and try them.

「Shirataki Junmai Ginjo Jyozen Mizuno Gotoshi」
This sake, produced by Niigata Prefecture’s Shirataki Shuzo, is a clear water sake that goes well with all kinds of food and can be enjoyed by both seasoned sake drinkers and first-time sake drinkers.
Developed under the concept of “Sake for women and young people,” the product went on sale on September 5, 1990.

2.Japanese Claft Gin「Okayama」
This month we will introduce “Okayama Craft Gin” produced by Miyashita Sake Brewery in Okayama Prefecture.Miyashita Sake Brewery began making sake in 1915, and in 1995 it released “Doppo,” a locally brewed beer.
In 2011, the distillery began producing whiskey, and in 2015, the 100th anniversary of the company’s founding, it began full-scale operations as the Okayama Distillery by installing a German-made pot still, a single-stage whiskey distillation machine.
“Craft Gin Okayama” is the first product to be made at the Okayama Distillery, and is based on the company’s own rice shochu and distilled with a unique blend of 10 botanicals, including juniper berries and coriander.Finally, it is finished in oak barrels in which shochu has been stored, resulting in a gin with an amber color not found in other transparent gins.
It has a higher alcohol content than other craft gins, so we recommend drinking it with soda or tonic. We hope you will try it.

4.Edo faceting, a traditional Japanese craft with delicate cuts and brilliance.
It is said that “Edo Kiriko” began in 1834 when Kyubei Kagaya engraved the surface of glass using Kongo sand.
In 1881, Emanuel Hopetman was invited from England to teach cutting techniques to more than a dozen Japanese, and the traditional Edo Kiriko glass crafting technique that has been handed down to the present day was established.
The delicate cut and design, the warmth of the form, and the use of color are typical of the Japanese. This beauty is a work of art different from foreign glasses such as Baccarat and Saint-Louis.
BAR Shinkai has adopted Edo faceted glass for its “Rock (Old) Glass” used for whiskey and spirits, and “Ocyoko” used for sake, so that many people can enjoy this traditional craft that Tokyo is proud of.
