(Location: Hioki-shi, Kagoshima, President: Yoichiro Nishi) opened its Ontake distillery in 2019, and after 3 years of aging, the first single malt whisky sherry cask ver. “Ontake THE FIRST EDITION 2023” was sold in December 2023. Fast forward five years, and the second single malt whisky sherry cask version “JAPANESE SINGLE MALT WHISKY Ontake 2025” is now on sale.
The second version of “JAPANESE SINGLE MALT WHISKY Ontake Distillery Single Malt Whisky Sherry Cask Ver.” is “JAPANESE SINGLE MALT WHISKY Ontake 2025”, vatting only the original whisky distilled in-house. 180 years of distillation technology is all utilized in the new pot, which is completed by in-house cultivated yeast, carefully selected two-row barley, and calculated distillation technology. This whisky is matured in Solera sherry vats, which are used for “sherry made to be tasted”, with a focus on quality.

At “BAR Shinkai”, the whisky is available at 45ml: 3,960 yen, 30ml: 2,640 yen, and 15ml: 1,320 yen per glass.
